Vegan Chocolate Chip Banana Muffins

Ingredients

  • 1 ¾ cups all-purpose flour

  • 1 cup light brown sugar, packed

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • 1 cup mashed ripe banana

  • ½ cup non-dairy milk

  • ½ cup coconut oil, melted

  • 1 teaspoon pure vanilla extract

  • 2 ½ tablespoons maple syrup

  • ½ cup vegan chocolate chips

 

Instructions

  1. Preheat oven to 400 degrees Fahrenheit. Line a twelve-muffin tin with liners or grease each muffin hole.

  2. In a bowl, mix together the flour, brown sugar, baking powder, salt, cinnamon, and nutmeg.

  3. In a separate bowl, whisk together the mashed banana, non-dairy milk, coconut oil, vanilla, and maple syrup.

  4. Pour the wet ingredients into the dry and mix until just combined, being sure not to over mix.

  5. Fold in chocolate chips (or whatever you want)!

  6. Divide the batter evenly among the prepared muffin liners. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
