Peanut Butter Honey Oatmeal Cookies
Ingredients
2 cups oats
1 ½ tsp baking powder
⅛ tsp baking soda
½ tsp salt
¼ tsp cinnamon
½ cup creamy peanut butter
1 egg
1 tsp vanilla extract
½ cup honey
Heaping ½ cup chocolate chips
Instructions
Combine the dry ingredients together in a large bowl.
Combine the wet ingredients together in a separate bowl, then add to the dry ingredient mixture and stir.
Fold in the chocolate chips.
Shape into balls and smush lightly to form a cookie shape.
Bake for 9–10 minutes on a baking sheet lined with parchment paper.
I might recommend trying this recipe with 2 eggs — I found that the dough wanted to stick to my hands more than to itself, even after being cooked. Potentially flour hands between rolling cookie dough balls. Or, just use a spoon to scrape out an appropriately-sized lump, drop onto the cookie sheet, and smush it around until it vaguely resembles a cookie shape. Also, I used WAY more than ½ cup of chocolate chips and it turned out incredible.
These oatmeal cookies are perfectly soft and sweet. Hands-down the best oatmeal cookies, I’ve ever eaten!
