Chocolate Chia Seed Pudding

 

Ingredients

  • 1 cup oat milk

  • ¼ cup chia seeds

  • 2 tbsp honey

  • 2 tbsp cocoa powder

  • 1 tsp vanilla extract

Instructions

  1. Whisk all ingredients together in a medium-sized bowl.

  2. Let it sit for 15 minutes for the chia seeds to start to activate, give it a stir, and then cover and put in the fridge to sit overnight or for a minimum of four hours.

  3. Enjoy it by itself or with fresh fruit or shredded coconut as a garnish.

Surprisingly refreshing, this chia seed pudding uses the natural gelling tendencies of chia seeds to create a perfectly light and dairy-free pudding.
