Chocolate Chia Seed Pudding
Ingredients
1 cup oat milk
¼ cup chia seeds
2 tbsp honey
2 tbsp cocoa powder
1 tsp vanilla extract
Instructions
Whisk all ingredients together in a medium-sized bowl.
Let it sit for 15 minutes for the chia seeds to start to activate, give it a stir, and then cover and put in the fridge to sit overnight or for a minimum of four hours.
Enjoy it by itself or with fresh fruit or shredded coconut as a garnish.
Surprisingly refreshing, this chia seed pudding uses the natural gelling tendencies of chia seeds to create a perfectly light and dairy-free pudding.
