Peanut Butter Chocolate Chip Chickpea Cookies

Ingredients for cookies

  • 1 ½ cups cooked chickpeas (rinsed)

  • ½ cup peanut butter

  • 1/3 cup maple syrup

  • 2 tsp vanilla extract

  • ½ tsp baking soda

  • Pinch of salt 

  • ½ cup vegan chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Blend all ingredients except chocolate chips until smooth. Then mix in chocolate chips.

  3. Spoon dough onto the prepared baking sheet in balls. Bake for 20 minutes.
