Herb Crusted Honey Chicken

 

Ingredients for chicken

  • Chicken thighs

  • 1 to 2 eggs

  • ¾ cup bread crumbs

  • ¾ cup flour

  • 2 tsp poultry seasoning

  • 1 tsp garlic powder

  • Hefty shake of salt

  • 2 tbsp dried parsley flakes

  • 1 tsp Italian seasoning

  • 3 tbsps butter

  • 1 tbsp canola/vegetable oil

Honey Butter Ingredients:

  • ¼ cup butter

  • ¼ cup honey

Instructions

  1. Combine bread crumbs, poultry seasoning, garlic powder, salt, parsley, and Italian seasoning in bowl. Crack the egg(s) into a second bowl and whisk lightly. In a third bowl, put the flour. Coat the chicken thighs thoroughly in the flour, then egg, then the bread crumb mixture. 

  2. In a large skillet over medium heat, cook chicken in butter and oil until a thermometer reads 165°, 4-5 minutes on each side. Meanwhile, combine softened butter and honey. Serve with chicken.

The sweetness of the honey butter drizzled on top is a perfect balance with the crispy, well-seasoned chicken. Best served with potatoes and a generous helping of greens!
