Herb Crusted Honey Chicken
Ingredients for chicken
Chicken thighs
1 to 2 eggs
¾ cup bread crumbs
¾ cup flour
2 tsp poultry seasoning
1 tsp garlic powder
Hefty shake of salt
2 tbsp dried parsley flakes
1 tsp Italian seasoning
3 tbsps butter
1 tbsp canola/vegetable oil
Honey Butter Ingredients:
¼ cup butter
¼ cup honey
Instructions
Combine bread crumbs, poultry seasoning, garlic powder, salt, parsley, and Italian seasoning in bowl. Crack the egg(s) into a second bowl and whisk lightly. In a third bowl, put the flour. Coat the chicken thighs thoroughly in the flour, then egg, then the bread crumb mixture.
In a large skillet over medium heat, cook chicken in butter and oil until a thermometer reads 165°, 4-5 minutes on each side. Meanwhile, combine softened butter and honey. Serve with chicken.
The sweetness of the honey butter drizzled on top is a perfect balance with the crispy, well-seasoned chicken. Best served with potatoes and a generous helping of greens!
